Eleven Madison Park keeps its three Michelin stars after going vegan

In May 2021, we covered the news that renowned New York restaurant Eleven Madison Park would convert to plant-based when it reopened after pandemic closures. At the time, chef Daniel Humm acknowledged the challenge in creating vegan dishes that are just as satisfying as the classics, but also explained his reasoning: "It is time to redefine luxury as an experience that serves a higher purpose and maintains a genuine connection to the community. A restaurant experience is about more than what's on the plate."

Innovation Update

In its latest round of star giving (and taking), Michelin just released the 2022 Michelin Guide New York. Eleven Madison Park held on to all three of its coveted stars, and became the first vegan restaurant worldwide to be awarded that highest score. 

Gwendal Poullennec, the International Director of Michelin Guides, told the Financial Times that Eleven Madison's three-star ranking will encourage young chefs to "emphasize the importance of sustainability and inspire important changes within the culinary landscape."

Meanwhile, chef Daniel Humm stated: "We took the jump to transform EMP into a plant-based fine dining restaurant knowing in our hearts that this is what we believed in. Last night, we were honored to be awarded three Michelin stars for the 11th year in a row. I am so beyond grateful to the team that's with us here now and every member who contributed through its nearly 25-year history. We are also grateful to our guests and partners who believed in our vision and encouraged us to push harder."
